Husband and Wife Create Their Own Tasty Dish: Cajun Lasagna

“My wife is Cajun and I’m Italian,” Jim Lawrence writes, “so we concocted this delicious Cajun lasagna that serves eight in about half an hour.”
CAJUN MICROWAVE LASAGNA
Water
Salt
1 (8-ounce) package lasagna noodles
1/3 pound lean ground beef
Salt, pepper
1 (27-ounce) tomato sauce
1 to 3 tablespoons Cajun oil
3/4 pound mozzarella cheese, shredded
1 pound low-fat ricotta or cottage cheese
Bring 4 quarts water and 2 tablespoons salt to boil. Cook lasagna noodles using directions on package. Rinse in cold water and drain well.
In skillet over medium heat, cook beef until browned. Season to taste with salt and pepper. Add tomato sauce and Cajun oil.
Place noodles in 13x9-inch baking dish. Add meat sauce, mozzarella and ricotta cheese. Cover with wax paper or plastic wrap and microwave at MEDIUM HIGH 10 minutes. Cool 2 to 3 minutes. Cut and serve. Makes about 8 servings.
