SINO-VEGGIES: UC Irvine’s Dr. Frank J. Meyskens, known as “the carrot researcher,” heads for China April 15 as a United Nations consultant. . . . He’ll spend two weeks as a guest of the Minister of Light Industry, talking to doctors about cancer prevention. . . . In the early ‘80s, Meyskens, director of UC Irvine’s cancer center, gained fame with studies of beta carotene, a substance found in carrots and other vegetables that seems to ward off many kinds of cancer.
