KICK BACK MENU: Many good local restaurants specialize in barbecue (OC LIVE!, Page 3). But noted restaurateur Fred Burrell says you can have great outdoor barbecue success at home. . . . Start with a good cut of aged beef, a good marinade recipe and white-hot charcoals. Have your seasonings, tongs and mopping sauce at your fingertips. Then, he says, “you put your meat on, pull your lawn chair out, pour yourself a nice cold glass of Mondavi wine, and kick back and watch it roll.”
