Good, nourishing beef soups can be found in many different cultures. Here are some of the best available in the Los Angeles area:

* Sanamluang Cafe: Beef tendon noodle soup here is so hearty as to be almost medicinal--it comes with flat rice noodles, chunks of tasty beef and tendon, whose chewiness and richness can become a passion. (Beef tendon soup, $4.50.) Sanamluang, 5176 Hollywood Blvd., (213) 660-8006.

* Pho 79: There are a dozen kinds of of pho, the classic Vietnamese beef noodle soup, available at this Chinatown cafe. * Petrelli’s: This Culver City steakhouse does its own butchering and makes use of its beef bones and trimmings by boiling them up into a hearty beef noodle soup. * Broadway Deli: A beefy shiitake mushroom barley soup is not as consistently terrific as we’d like--some days, the cook pours in too much Worcestershire sauce--but on a good day, it’s about as hearty and satisfying as soup gets.
