“The other night I made a big bowl of my trademark pasta--penne with pancetta and arugula--and opened up a bottle of 1994 Stags’ Leap Winery Petite Syrah. It was a good bowl of pasta, and the wine was true to form. It was really full of spice with light earthy tones, really soft and velvety. It actually went together wonderfully, the pancetta gives the pasta enough fat to hold up to a red wine.”
